Fast Italian Sole

Ingredients

2 carrots

1 zucchini

4 whole green onions

1/2 red and green pepper

500 g sole fillets

Pinch of garlic powder. basil salt and pepper

1/2 cup tomato sauce

1/2 cup grated mozzarella

1/4 cup grated Parmesan

Directions

Chop vegetables coarsely. Place in an ungreased 2- L casserole. Cover with vented clear wrap. Microwave on high for 4 to 5 minutes, until tender-crisp.

Place fish on top of vegetables, arranging thicker portions to outside edge of casserole. Sprinkle with seasonings. Drizzle with tomato sauce.

Cover with vented clear wrap. microwave on high for 5 to 6 min. Drain off liquid. Sprinkle with cheese. Microwave, uncovered, for 2 to 3 min., until cheese is melted. Serves 4.
